Sausage, Kale & Potato Soup
Ingredients
Yield: 4 servings
1 pound cooked sausage, sliced into rounds
1 large onion chopped
1 clove garlic minced
3 red potatoes cut into ¼-inch cubes
Handful of chopped kale (bagged or head of kale)
4 cups chicken broth
1 tablespoon balsamic vinegar
Salt to taste
Freshly ground pepper to taste
3 roma tomatoes, cored and cut into ½-inch dice
Instructions
Step 1
Place the sausage in a large pot over medium-low heat and cook until it begins to render its fat, about 2 minutes. Add the onion and cook for 2 minutes. Add the garlic and potatoes and cook for 2 minutes.
Step 2
Stir in the chicken broth, vinegar and salt. Bring to a boil, reduce heat, cover and simmer for 15-20 minutes until potatoes are cooked. Season with pepper. Stir in the tomatoes and kale and cook, uncovered, for 15 minutes.
